{"id":2091,"date":"2022-03-31T11:05:46","date_gmt":"2022-03-31T15:05:46","guid":{"rendered":"https:\/\/unisoya.wpenginepowered.com\/?p=2091"},"modified":"2022-03-31T11:05:46","modified_gmt":"2022-03-31T15:05:46","slug":"irish-shepherds-pie-with-tofu","status":"publish","type":"post","link":"https:\/\/unisoya.com\/en\/recipes\/irish-shepherds-pie-with-tofu\/","title":{"rendered":"Irish Shepherd&#8217;s Pie with Tofu"},"content":{"rendered":"<div style=\"margin-top: 0px; margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div><p><em>By La vie dans mon assiette<\/em><br \/>\n<em>In collaboration with Unisoya<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong><u>What you need:<\/u><\/strong><\/p>\n<p><strong>For the mashed potatoes:<\/strong><\/p>\n<p>4-5 potatoes<\/p>\n<p>About \u00bd cup homemade buttermilk (\u00bd milk and \u00bd tbsp lemon juice)<\/p>\n<p>2 tablespoons butter<\/p>\n<p>Ground Salt and pepper<\/p>\n<p><strong>For the rest:<\/strong><\/p>\n<p>1 tablespoon olive oil<\/p>\n<p>Half of a 454g package Unisoya soft tofu, crumbled<\/p>\n<p>2 French shallots<\/p>\n<p>1 clove of garlic<\/p>\n<p>2 carrots finely diced<\/p>\n<p>\u00bd teaspoon cinnamon<\/p>\n<p>1 teaspoon cumin<\/p>\n<p>1 pinch cayenne pepper<\/p>\n<p>1 chopped green onion<\/p>\n<p>1 tablespoon flour<\/p>\n<p>\u00bd cup chopped fresh flat-leaf parsley<\/p>\n<p>\u00be cup homemade broth<\/p>\n<p>Grated parmesan<\/p>\n<p>fresh nutmeg<\/p>\n<p>&nbsp;<\/p>\n<p><strong>The instructions<\/strong><\/p>\n<p>Peel the potatoes and boil them for about 15 to 18 minutes or until cooked through and tender. Mash to a smooth puree with buttermilk and butter. Salt and pepper. Set aside.<\/p>\n<p>In a frying pan, heat the oil and brown the onion, garlic and carrots about 3 minutes. Add the tofu and brown it. Add spices, green onion, parsley and flour. Pour in the broth. Salt and pepper, to taste<\/p>\n<p>Transfer the mixture to a casserole dish. Top with the pureed potatoes.<\/p>\n<p>Bake at 350\u00b0F for about 15 minutes.
