{"id":2363,"date":"2023-01-29T05:05:36","date_gmt":"2023-01-29T10:05:36","guid":{"rendered":"https:\/\/unisoya.wpenginepowered.com\/?p=2363"},"modified":"2023-01-03T09:16:11","modified_gmt":"2023-01-03T14:16:11","slug":"sweet-potato-stuffed-with-goat-cheese-pistachios-chives-tofu","status":"publish","type":"post","link":"https:\/\/unisoya.com\/en\/recipes\/sweet-potato-stuffed-with-goat-cheese-pistachios-chives-tofu\/","title":{"rendered":"Sweet potato stuffed with goat cheese, pistachios, chives &#038; tofu"},"content":{"rendered":"<div style=\"margin-top: 0px; margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div><p><em>By La Vie dans mon Assiette: <\/em><br \/>\n<em>In collaboration with Unisoya<\/em><\/p>\n<p><strong>What you need:<\/strong><\/p>\n<p>Ingredients (1 serving):<br \/>\nTo increase the recipe, follow the same quantities by multiplying according to the<br \/>\nnumber of potatoes needed.<\/p>\n<p><strong>For the tofu:<\/strong><br \/>\n\u00bc 454g package Unisoya Organic Fine Herb Tofu, drained and<br \/>\ncrumbled<\/p>\n<p>1 tsp honey<\/p>\n<p>\u00bd teaspoon garam masala<\/p>\n<p>Salt<\/p>\n<p>Ground pepper<\/p>\n<p>1 sweet potato<\/p>\n<p>Handful of chopped spinach<\/p>\n<p>1 teaspoon butter<\/p>\n<p>Goat cheese, to taste<\/p>\n<p>Chive<\/p>\n<p>Ten roughly chopped roasted pistachios<\/p>\n<p>Salt<\/p>\n<p>Ground pepper<\/p>\n<p><strong>The instructions:<\/strong><br \/>\nPreheat the oven to 400\u00b0F. Place the sweet potato on a baking sheet covered with parchment paper. Lightly prick the potato. Salt, pepper and pour a thin drizzle of olive oil. Bake for 35 to 45 minutes or until cooked.<\/p>\n<p>Meanwhile, crumble the tofu and mix it with the spices.<\/p>\n<p>Heat an oiled non-stick pan and place the tofu in it. Cook over medium heat between 4 and 6 minutes, stirring often. Set aside.<\/p>\n<p>When the potato is ready, let it cool slightly to better handle it.<\/p>\n<p>Make an incision along the length of the potato without slicing it too deep and scoop out the flesh.<\/p>\n<p>Mash the flesh with the butter and chives. Salt and pepper. Deposit the spinach at the bottom of the skin and cover with the flesh<\/p>\n<p>Add tofu, goat cheese and pistachios.<\/p>\n<p>Add chives to garnish (optional). Serve while still warm.
