{"id":2566,"date":"2023-08-17T05:00:11","date_gmt":"2023-08-17T09:00:11","guid":{"rendered":"https:\/\/unisoya.wpenginepowered.com\/?p=2566"},"modified":"2023-08-10T09:24:03","modified_gmt":"2023-08-10T13:24:03","slug":"linguini-with-cherry-tomatoes-ricotta-tofu","status":"publish","type":"post","link":"https:\/\/unisoya.com\/en\/recipes\/linguini-with-cherry-tomatoes-ricotta-tofu\/","title":{"rendered":"Linguini with cherry tomatoes, ricotta &#038; tofu"},"content":{"rendered":"<div style=\"margin-top: 0px; margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div><p><em>By La Vie dans mon Assiette: <\/em><br \/>\n<em>In collaboration with Unisoya<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>What you need<\/strong><\/p>\n<p>Ingredients (2 servings)<\/p>\n<p><strong>For the tofu:<\/strong><\/p>\n<p>\u00bd package Unisoya tofu, 454 g, cut into medium-sized cubes<\/p>\n<p>1 tablespoon balsamic vinegar<\/p>\n<p>1 tablespoon tamari<\/p>\n<p>2 teaspoons maple syrup<\/p>\n<p>Salt<\/p>\n<p>Ground pepper<\/p>\n<p>1 tablespoon vegetable oil<\/p>\n<p>&nbsp;<\/p>\n<p><strong>For the pasta:<\/strong><\/p>\n<p>Linguini<\/p>\n<p>3 tablespoons olive oil<\/p>\n<p>2 cloves garlic<\/p>\n<p>1 cup cherry or grape tomatoes, halved<\/p>\n<p>1 cup ricotta<\/p>\n<p>Zest of a lemon<\/p>\n<p>Fresh basilic<\/p>\n<p>Salt<\/p>\n<p>Ground pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong>The instructions<\/strong><\/p>\n<p>Mix the tofu cubes with the rest of the ingredients, except the oil.<\/p>\n<p>In a skillet, saut\u00e9 the tofu cubes with the oil. Cook over medium heat between 6 and 8 minutes, turning the cubes, or until the pieces are well grilled. Set aside on a plate.<\/p>\n<p>In the same skillet, over medium-low heat, saut\u00e9 the garlic with half the oil olive for about two minutes. Add the tomatoes and grill for about 1 minute.<\/p>\n<p>Set aside<\/p>\n<p>Meanwhile, cook the pasta until al dente. Keep about 3 tablespoons of cooking water, drain the pasta and put back in the cauldron with the cooking water. Add the remaining olive oil and the zest of half a lemon and coat the pasta well. Finally add the cherry tomatoes. Salt and pepper. Mix.<\/p>\n<p>Serve the pasta on plates. Add the grilled tofu. Garnish with ricotta, remaining lemon zest and basil.
