BBQ tofu burger with Southwestern sauce (Unisoya)

What you need

2 burgers

Tofu :

A packet of Unisoya tofu

1 tablespoon vegetable oil

1 teaspoon cornstarch

1 teaspoon strong smoked paprika

1 teaspoon garlic powder

½ teaspoon celery salt

1 tablespoon maple syrup

1 tablespoon Worcestershire sauce

½ teaspoon freshly ground cumin

1 tablespoon chipotle sauce of your choice, Bull’s-Eye style

Salt

Ground pepper

For the pickled shallots:

2 French shallots, sliced

¼ cup white vinegar (or other)

1 tablespoon maple syrup

½ teaspoon salt

 

For the Southwestern-style mayonnaise :

 

½ cup mayonnaise

¼ cup finely chopped fresh coriander

1 tablespoon strong mustard

1 tablespoon freshly squeezed lime juice

1 chipotle pepper (adobo sauce)

1 small clove garlic, finely chopped

Salt

Pepper

Burger buns

Mozzarella cheese

Spinach

Pickles (homemade or store-bought)

 

How to proceed

Cut tofu lengthwise into 2 slices. Drain and absorb.

Marinate the tofu and leave to rest while you prepare the recipe (or marinate 24 hours in advance for more flavour).

Prepare the French shallot mixture and leave to macerate while you prepare the recipe (about 30 minutes).

Preheat BBQ to 450°F and brush. Oil grates as needed.

Grill the tofu for 2 to 3 minutes on each side, or until the slices are well marked.

Toast the breads.

Drain the shallots.

On toasted bread, place cheese and top with mayonnaise. Add tofu slices and remaining ingredients.

Serve with salad, French fries and/or plain potato chips.
