Egg Salad (without eggs)

4 portions.

Ingredients:

  • 720g of Regular Tofu Unisoya
  • 4 small shallots
  • 1 cup of celery, chopped
  • 1 carrot, chopped
  • 2 tbsp chopped parsley
  • 1 tbsp olive oil
  • 1 tbsp tumeric
  • 1 pinch of thyme, basil & chervil
  • Salt & Pepper to taste
  • 1 tbsp onion powder
  • 1 tbsp salted herbs

How to prepare:

Mix all ingredients with a fork. Serve on a bed of salad or as a sandwich spread with lettuce, tomatoes & cheese.
