What you need:
Ingredients (2 servings)
2 slices of homemade bread*
10-15 chopped spinach leaves
2 tablespoons zested Parmesan cheese
Zest of half a lemon
3 eggs
Salt & ground pepper
For the tofu:
1 tablespoon butter
¼ package of Unisoya tofu 454 g with vegetables
½ teaspoon cornstarch
1 chopped green onion
Pinch of freshly grated nutmeg
Salt
Maple syrup
*We opted for a bread with apricots, raisins, sunflower and chia, in order to enjoy a sweet and salty flavor.
The instructions
Grate the tofu. Mix it in a bowl with the cornstarch, green onion, nutmeg and a pinch of salt.
Heat 1 tablespoon of butter in a non-stick pan and add the tofu mixture. Cook over medium heat for 8 to 12 minutes, stirring, or until the pieces are crispy. Pepper. transfer to a bowl and set aside.
Toast the two buns. Then butter them on both sides.
In a bowl, combine the spinach, lemon zest and Parmesan.
Crack 3 eggs and mix coarsely (not too much, in order to keep the marbled effect of the egg yolk).
In the same initial skillet, place the two breads. Add the egg mixture. Cook over medium-low heat until the ingredients are cooked.
Place on a plate, add the tofu and drizzle with maple syrup.
Season with pepper and add nutmeg if needed.\
