Preparation

Pat the tofu block dry. Cut into sticks. Set aside.

Beat the egg in a shallow dish. Set aside.

In another shallow dish, mix the panko breadcrumbs (about 2/3 cup), lemon zest and parmesan. Season generously with salt and pepper. Set aside.

Preheat the oven to 450°F (230°C).

Dip each stick in the egg, then coat in the panko mixture. Repeat with all the sticks.

Place the sticks on a parchment-lined baking sheet and bake for about 15 minutes, or until golden and crispy.

Remove from the oven and transfer the sticks to a serving dish with a lemon wedge on the side.

Serve with the mayonnaise of your choice.
