Tofu Pancetta Carbonara Pasta

Préparation

Cut the tofu block into thin slices, about the thickness of bacon, then concasser for obtain small pieces. The thinner the slices, and crispier will be the pancetta ! Prepare the tofu mixture, add the pieces, and let marinate for 2 hours (or 24 hours for more flavor).

Cook the tofu in a non-stick skillet with oil and the butter for about 6 minutes or until the pieces are golden, making sure to flip them. Set aside.

In a saucepan boiling water salted, cook the pasta for qu'elles areal dente. Drain and keep 1/2 cup water Cooking.

In a bowl, battre the jaunes d'egg a few secondes and add the Parmesan and water Cooking. Well Mix.

Return the pasta in the saucepan with a dricezle of olive oil and the halves tofu. Mix. Transfer the sauce and coat all well. Season with salt and pepper.

Serve quickly in plates. Add the restant tofu, parmesan and parsley dish.
