When fresh, marinade absorption can take up to 12 hours, whereas tofu that has been frozen and thawed is more spongy and soaks up sauces much faster, in about 30 minutes. That's the big advantage of freezing and thawing tofu.

Please note that frozen tofu changes color and texture! Don’t worry, it returns to its original color as it thaws.
