What you will need (3 servings)
½ pack of 454 g Unisoya soft tofu, cut into thin slices
1 tablespoon Dijon mustard
½ freshly squeezed lemon
3 slices of multigrain bread
1 tablespoon mayonnaise
1 tablespoon old-fashioned mustard
½ tomato, thinly sliced
Dozen cherry tomatoes cut in half
6 mozzarella slices
1 chive, finely chopped
Freshly ground pepper
1 tablespoon olive oil
How to prepare:
Brush the tofu slices with the Dijon mustard and lemon, then season generously with pepper. Grill them in a pan with olive oil. Set aside.
Lightly toast the bread. Set aside.
Combine mayonnaise and old-fashioned mustard, then spread over slices of bread. Add the tofu slices, the half tomato slices and then the mozzarella.
Bake at 350 ° F (180 ° C) for about 3-4 minutes.
Cook the eggs in an oiled pan, keeping them runny. Set aside.
Take the bread out of the oven. Add the eggs on the slices, the cherry tomatoes, zested Parmesan cheese, then the chives. Return to the oven for 2 minutes.
Season with pepper and serve.
