Sweet and savory lunch-brunch: goat cheese toast, apricot, scrambled tofu & pistachio

What you need:

Ingredients (4 toasts)


For the tofu:


Marination of tofu:


½ 454 g package of Unisoya fine herb tofu, drained and crumbled

4 tablespoons 15% cream

2 small French shallots finely chopped

2 tablespoons nutritional yeast

Salt and pepper

1 tablespoon butter


For the toasts:

4 slices of country bread (Bonus: sourdough)

Goat cheese

Dried apricots cut lengthwise

Roasted and roughly crushed pistachios



Milled pepper


*Please note that we offer you a list of ingredients and we let you use the quantity you want. You could consider placing the ingredients in the center of the table so that everyone makes their own toast.


The instructions:

Heat the butter in a non-stick pan and soften the French shallot. Add the tofu and the rest of the ingredients. Continue cooking until the liquid evaporates. To book.

Toast the bread slices and spread the goat cheese when ready.

Add the tofu, apricots and pistachios. Pour a dash of honey.

Salt and pepper.

Serve with fresh fruit and a good coffee or orange juice.
